Crazy about Fall

Fall, Autumn, Pumpkin Season, whatever you want to call it is the the best season, and my personal favorite out of the four. I love that there are warm day and look forward to the cooler days. The leaves are changing from green to yellow, red, orange, and brown. There is so much activity with fall that you don’t have in other seasons.

During this time of year, our family is so busy. This month J is camping with his scout troop two weekends in a row. While he is excited about it and I’m excited for him, it also means that I’m a semi-single mom of two girls for the weekend since Keith usually going camping with J.

So what does an impromptu single mom of two girls do for the weekend? We bake of course. Some of my favorite recipes I make are recipes I only make in the fall. So to help inspire you into doing something fun and making something yummy here some of my favorite recipes I love to make:

Potatoes and Sausage

Ok, this is a super simple recipe that pleases even the most picky kids. I usually make a double recipe because my kids love it so much. I also add extra sausage.

1 lb. smoked sausage links
4 large baking potatoes
1 cup Cheddar Cheese
2 to 3 TBSP olive oil
Salt and Pepper to taste

Heat oven to 375 degrees. Cut the sausage links into bite size pieces. Peel and cut the potatoes into bite size pieces. Put sausage and potatoes into a large bowl. Add the olive oil and salt and pepper to taste. Mix until coated.

Dump potato and sausage into a sheet pan or large roasting pan and bake for 35-45 minute. The potatoes should be browned and fork tender. Pull out of the oven and add the cheese. Put back in the oven for two minutes or long enough to melt the cheese. Serves 4-6 people.

Now that we have the main dish. I popular side dish my family loves is:

Creamed Corn

This recipe is perfect for the crock pot (which is how I usually cook it).

1 lb frozen corn
8 oz cream cheese
1/2 cup butter
Salt and Pepper to taste

Put all ingredients into a large sauce pan. Heat until cream cheese and butter are melted and the mixture is heated thought. Serves 4-6 people

Main dish, side dish, and now dessert. There are so many desserts that my family love that take hardly any prep time. But my favorite is super simple and only take a few ingredients.

Dump Cake

2 cans of your favorite pie filling (Cherry, Apple, Blueberry, etc. work well)
1 box of white or yellow cake mix
1 stick of butter, melted

In a 9×11 pan dump in the pie filling. Sprinkle the dry cake mix over the top. Pour the melted butter over the cake mix. Bake at 350 degrees for 20-30 minutes. The filling should be bubbly and the cake mix on top golden brown. Serve warm with ice cream.
